Tape colenak

Colenak (dicocol enak) may have been overshadowed by other developing city hawker. But not a few who still find these traditional snacks. Although simple, this aspect should always be halal colenak certainly in order when dipped hmm ... it was very yummy...!

It is said that this unique traditional confectionary has been recognized by the people of Bandung city since the beginning of the 20th century. Colenak initially sold using wheelbarrows that hung in a crowded place, like at the edges of roads, markets, and fairs in the square of the city of Bandung.

One of the surviving colenak seller is Colenak Murdi Son. Seller colenak which had stood since the 1930s is said to be pioneering in the city of Bandung. According to the present owner, Hj. Sofiah, the word 'Murdi' comes from his grandfather's name of the vendor peuyeum digulaan (tape given a sugar), so first colenak snacks are usually called.

Colenak itself is made from fermented cassava or in Sundanese called Peuyeum. Well, peuyeum is then baked and served with grated coconut sand sugar and splash of red. If you're wondering why the food is called colenak? The name comes from buyers who mention how eating snacks are delicious dipped in a way (colenak).

As the traditional aspects of halal food colenak still must be considered. Not only from peuyeum is a consideration but also of other additives. Fermentation of cassava into tape includes two stages of breaking starch into simple sugars by fungi and stage of decomposition of sugar into alcohol by yeast. Well, this is where the required accuracy for the fermentation process just until the sugar and do not continue until the form of alcohol.

Also to be examined again is the sauce. Of course in addition to coconut, brown sugar, and jackfruit, colenak sauce can also be made from durian. Where it used to taste durian essence (flavor) that need to be scrutinized aspects of durian halal status.
